By relying on high-quality whole ingredients, rich extra-virgin olive oil, and bold natural flavors, it delivers a satisfying, nourishing meal with almost no effort and even less cleanup.
Ingredients (Serves 2)
2 wild-caught salmon fillets (or organic chicken breasts)
1 cup cherry tomatoes
1 can chickpeas (rinsed and patted dry)
1 small red onion, sliced into wedges
1 cup kalamata olives
3 tbsp high-grade Extra Virgin Olive Oil
1 tsp dried oregano, sea salt, black pepper, and garlic powder
Fresh lemon wedges and crumbled feta for finishing
The Method
Prep: Preheat your oven to 400°F. Line a large sheet pan with parchment paper.
Assemble: Toss the chickpeas, cherry tomatoes, olives, and red onion on the pan. Drizzle with 2 tablespoons of olive oil, oregano, salt, and pepper. Toss to coat evenly.
Add Protein: Nestle the salmon (or chicken) fillets in the center of the vegetables. Drizzle the salmon (or chicken) with the remaining olive oil and season lightly with garlic powder and sea salt.
Roast: Bake for 12 to 15 minutes until the salmon (or chicken) is flaky and the tomatoes have burst open into a natural sauce.
