Healthy and Delicious: Gnocchi With Broccoli Recipe

In recent years, gnocchi have become an essential ingredient in our cuisine, and not without reason, since they are an excellent choice for many different reasons. Gnocchi have a unique, soft, and fluffy texture that melts in the mouth. Their mild flavor makes them an ideal canvas for a variety of sauces, from simple butter and sage sauces to rich meat ragouts and creamy cheese sauces. This flexibility allows them to satisfy different tastes. Although light in texture, gnocchi are quite filling due to their carbohydrate content, mainly from the potatoes and flour. This makes them a satisfying choice for a main meal. Gnocchi have deep roots in Italian cuisine, with a history dating back to Roman times, and they are associated with family traditions and celebrations, adding a sense of nostalgia and authenticity to each dish.

Gnocchi are also versatile; they can be served in many ways: boiled with sauce, sautéed until crispy, or baked in the oven with cheese. This flexibility makes them suitable for various circumstances and preferences.

Although they require a little practice to perfect, basic potato gnocchi are made with simple ingredients and a relatively straightforward process. This makes them a popular choice for those who enjoy cooking at home. However, you can easily find them in stores.

And there's nothing more comforting than a filling, healthy, and very spring-like recipe to enjoy on a weekday or even on the weekend when we don't want to spend too much time in our kitchen.

Ingredients

  • 12 oz fresh gnocchi

  • 7 oz broccoli, well cleaned and chopped

  • 3 tbsp cream cheese

  • 1/2 tbsp sweet mustard

  • Juice of 1/2 lemon

  • 2 tbsp olive oil

  • 1/2 cup frozen peas

  • 1 tbsp chopped nuts

Instructions

  • Mix the cream cheese, mustard, and lemon juice in a bowl. Leave it aside.

  • Fill a pan with plenty of water, add salt, and once it boils, add the broccoli. Boil the broccoli for 5 minutes, and then add the gnocchi.

  • Stir once, close the lid, and boil for two minutes.

  • At the same time, first heat a little olive oil in a non-stick pan.

  • Add the peas and sauté for 5 minutes.

  • Add the broccoli and gnocchi to the pan and sauté for a minute.

  • Transfer to a bowl, pour over the cream cheese mixture, and stir everything together.

  • Serve with grated parmesan.
